Hello, nice to meet you all I’m going to jump right into kitchen and show you my first comfort favourite for a cold day and also an easy crowd pleaser. My Aubergine Curry.

Salmon Poke Bowl

when my grandmother has had enough of Pescatarian meals I make sure to order in some Japanese sashimi grade salmon to make myself a dish not so Japanese though not far removed. I love a Poke bowl as well as many other bowled foods, acai bowls cold and brightly coloured and Buddha bowl filled with healthy grains, pulses and array’s of technicolor veggies. I serve this with a few slices of avocado, crunchy against soft sharp radish to cooling cucumber. Definitely one of my favourites.

Beetroot Hummus

I used to just make plain old chickpea hummus and maybe I would add a bit of coriander or a touch of wild garlic but a friend suggests adding red pepper and with the colour transformation my mind went hay wire. What else makes plain food dramatically change colour and still taste fantastic? My first thought was beetroot and I was amazed how before my eyes the blender turned my beige dip into a blushing pink triumph. #fast-food #hummus #veggie #dips

Prawn Noodle Soup

This my version of chicken soup for the soul and this prawn broth always warms me up on a winters day. Loaded with ginger, garlic and a hit of chilli, it only takes fifteen minutes to pull together once all the Asia inspired veggies are cut to size to cook at the same time as the rice noodles and big meaty prawns. I serve it with sticky jasmine rice to soak up all that yummy fish broth. #Asian-cooking #comfort-food #pescatarian #fast #seafood

Siracha Rice Bowl

I make this quick and easy bowl when ever I have had a long day and don’t feel like being at a stove for hours . Fried rice is one of my favourites packed full of veggies and loaded with Asian flavours and spices. I top the whole thing off with a a few slice of fresh green avacado and a fried egg. Just because nothing can be hot enough for me a dash of siracha pulls the whole dish together. #vegetarian #easyfood #siracha #comfortfood

Peach Cobbler muffins

These peach cobbler muffins were born from a failed attempt at peach and ginger jam although I burnt the bottom I managed to save the peaches to create these warm spicy muffins. They went down well with my greatest critiques …especially with custard. #muffins #comfortfood #autumn #baking

Cauliflower Cheesed

I have always been hellbent on making my own sauces from scratch for pasta, gravy for stews, tomato sauces for Parmesans and I recently made a 5- cheese-sauce combining cheddar, mozzarella, Parmesan, Gouda and cream cheese that I thought was perfect for a really saucy cauliflower cheese with a thick cheddar crust. I served this with a rustic crust loaf on our last rainy British summer day. #comfort-food #vegetarian #easy #vegetables

Oven Baked Halloumi Sticks

With halloumi being a sturdy cheese i thought it could be more than just grilled and chard. I tried to find a way of crisping up halloumi without it turning squeaky. I often make chips in the oven if I’m making a thicker style and i gave the same thing a try with the halloumi on a low heat turning them every so often. this kept the insides soft whilst giving the outside a crispy like skin. I paired it with just a simple dipping sauce of mayo, Greek yogurt and siratcha and doused in a little of my homemade rosemary infused olive oil. #comfort-food #vegetarian #crunchy
